Preheat oven to 350. Sift flour, baking soda and salt into a bowl; set aside.
Put sugars in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, stopping to scrape down the sides, about 2 minutes. Beat in the eggs, one at a time. Add vanilla. Reduce speed, gradually add flour mixture, and mix until just combined – do not over mix.
Turn dough out onto a floured surface. Divide into 2 equal halves. Roll each half into a log shape and wrap in parchment paper. Chill 30 minutes. Reshape log and wrap in plastic wrap (discard parchment).
Chill another 30 minutes (or freeze if giving as a gift).
To bake, cut dough into slices and place on parchment-lined baking sheets.
Bake until golden brown, about 8-10 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to racks and let cool completely.
