Nellie & Joe’s Key Lime Pie – Version 214-ounce can sweetened condensed milk 3 egg yolks (whites not used) 1/2 cup Nellie and Joe’s Key West Lime Juice 1 teaspoon vanilla (not original to recipe; added by The Gracious Posse) 1/3 bar of cream cheese (not original to the recipe; added by The Gracious Posse) 9″ graham cracker pie crust (see recipe below)
Preheat oven to 350. Combine milk, egg yolks, lime juice, cream cheese and vanilla. Blend until smooth. Pour filling into pie shell and bake at 350 for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream and garnish with lime slices.
Graham Cracker Pie Crust for 9″ pie2 cups crushed graham crackers 1/4 cup plus 2 teaspoons granulated sugar 1/4 cup plus 3 tablespoons butter, melted
Preheat oven to 350. Combine all ingredients. Pour into 9″ pie plate. Using the bottom of a measuring cup, firmly press mixture evenly over bottom and sides of pie plate. Bake 7-9 minutes.
