Do you have a dish that you are on a constant quest for the best recipe to make it? My elusive dish has been Key Lime Pie. For years I’ve used a Nellie & Joe’s recipe, shared with me from cousin pPf.
It served me very well, as you can see from its smudges and drips, but I knew there was something missing, a slightly mellower taste if you will. While vacationing in Sunset Beach, North Carolina we discovered our favorite seafood shack, Bill’s Seafood, offered a Key Lime Pie,
and it was delish. Almost the taste I had in mind (or mouth), plus it can’t be beat for instant gratification.
One weekend at the river, I decided our menu called for the pie. As I grabbed the distinctive yellow bottle out of the fridge,
I happened to notice the recipe on the container wasn’t the same! Had Nellie and Joe been tweaking their recipe? I had to try the new one. I served it to a discerning crowd. It passed their test, but they had no comparison to the pie at Bill’s Seafood.
So, last week at the beach we went on a pie bender and did a taste test. The new-and-improved pie edged out Bill’s Seafood’s by a fork-full. I’m thrilled to know I can whip up a taste of the beach when ever I feel the call. I give you both recipes simply because one (the original, I’ll call Version 1) doesn’t require baking, and that’s a bonus on a sweltering summer day.
