Tuesday|Posse Exchange – Coconut Pound Cake – An Heirloom Recipe included two favorite coconut pound cake recipes. Gracious reader, aRm, in turn forwarded her “Best Pound Cake” recipe that she found in the Roanoke World-Times back in 1984 when she was a new bride. Of course, we had to share it with you.
The Best Pound Cake3 cups all purpose flour ½ tsp baking powder ½ tsp salt 1 cup softened butter ½ cup Crisco 3 cups sugar, sifted 5 eggs 2 tsps vanilla 1 tsp almond extract ½ tsp nutmeg 1 cup milk
Preheat oven to 325°.
Sift flour three times. Measure three cups, add baking powder and salt. Set aside.
Sift sugar two times. Set aside.
Cream butter and Crisco until fluffy. Add sugar slowly. Add eggs one at a time. Add flavorings.
Mix in dry ingredients alternating with milk. End with dry ingredients.
Pour batter into greased and floured tube pan. Bake 1 hour 30 minutes. Cool in pan 15 minutes.

Friday|About Town – We hear that a couple of you have been craving cupcakes after reading Sweet Nellie’s Cupcakes – Hip to Be Square. Just wait until you try Sweet Nellie’s: you will become addicted.
